Amaranth Porridge with Pear Juice

Ingredients:

- 1/2 cup of amaranth, rinsed well

- 1/4 cup of dried currants, raisins, cranberries or apricots, chopped to your preference.

- 1 tsp ground cardamom (could add or substitute ginger or allspice)

- 1/2 cup unsweetened pear juice

- 1/2 cup water

- 1 tbsp slivered blanched almonds (could add or substitute with another nut of your preference) or forgo the nuts all together.

- For Women: 3 tbsp ground flaxseed

Directions:

In a medium saucepan, combine all ingredients. Bring to a boil, stirring consistently. Reduce heat, simmer and stir until amaranth softens from crunchy to chewy. You can always add more water or juice if necessary. Top with fresh cream, yogurt, or nut milk if you like.

Pears:

Pears are considered highly medicinal in Ayurveda. They have been researched for their ability to help the body eliminate waste and mucus, and restore balance to the colon and lungs. Pear juice is helpful when you have a dry cough, and is often used as an ingredient in cough syrups. It can also assist with nausea, vomiting fevers, and hyperacidity.

Breakfast:

All bodies are different. For some skipping breakfast and working with a 14-16 hour overnight fast helps with metabolism and weight stability. For others, breakfast is essential for calming the nerves and kindling Qi production for the day. If you tend to be anxious in the morning, try eating a light breakfast. If you tend to feel full and heavy in the morning, explore waiting a bit before eating your first meal of the day.
